What Is Ice-Cream Sandesh?

Sandesh is a traditional Bengali sweet that has been savoured for centuries. Its origins can be traced back to the Bengal region of India, where it holds a special place in the hearts of its people. The fusion of Sandesh and ice cream is a culinary innovation. However, it is essentially bhapa (steamed) Sandesh.

let’s get into the exciting part: making this delectable dessert at home. It’s definitely the perfect dessert for Janmashtami.

Ingredients

  • 1 litre milk
  • 2 tbsp vinegar
  • 2 tbsp water
  • 4 tbsp powdered sugar
  • 2 tbsp milk powder
  • 1/4 tsp elaichi powder
  • Kesar colour
  • 2-3 tbsp milk or a little more
  • 8-10 kesar strands
  • 1/4 cup pistachios, finely chopped

Method

  • In a pan, bring milk to a boil. Let the milk curdle after adding the vinegar and water mixture.
  • Put this through a strainer and rinse it with water, pressing down to get rid of all the extra water.
  • Blend the chhena with the milk powder, elaichi powder, kesar colour, and powdered sugar
  • To get this into a pourable consistency, add the milk and combine one more.
  • Add kesar strands and a foil paper layer to your tin
  • Place the batter in the pan and wrap it in foil. Let it cool after 20 minutes of steaming
  • When you’re ready to serve, demolish the mould and place it in the freezer for two to three hours.
  • Add chopped pistachios and kesar as a garnish. Slice it up and dig in!
