Nestled in the Sacred Valley of Peru, Mil Restaurant is a gastronomic destination that takes diners on a journey through the varied ecosystems of the Andes. Founded by renowned chefs Virgilio Martínez and Pía León, Mil offers a tasting menu that explores the rich biodiversity of the region. With its commitment to sustainability and community engagement, Mil provides an immersive dining experience that connects guests to the land and its people.
Mil Restaurant: Dining At The Roof Of The World
What sets Mil apart—quite literally—is its altitude. Located near the archaeological site of Moray, Mil Restaurant is situated at an elevation of 3,568 metres above sea level. This unique setting isn’t just for the views (though spectacular); it directly influences the menu. The ingredients, cooking methods, and even how the flavours taste are all influenced by the high altitude.
A Culinary Expedition At High Altitude
The restaurant’s tasting menu features eight courses that showcase ingredients sourced from eight distinct Andean ecosystems. Each dish reflects the unique flavours and textures of the region, offering diners a taste of the diverse landscapes surrounding the restaurant. The menu features ingredients such as wild chincho, black quinoa, and tree tomato, highlighting the rich agricultural heritage of the Andes.
Immersive Experiences Beyond The Plate
Mil offers more than just fine dining. It’s a full experience that brings you closer to nature and local culture. Guests can take part in the “MIL Immersion”—a five-hour guided journey. It starts with a visit to the ancient Inca site of Moray. From there, you explore Chacra MIL, the restaurant’s nearby farmlands. You’ll also walk through hills filled with native plants used for medicine and food. Along the way, you’ll sample traditional drinks and ferments made from local ingredients. These tastings help you understand how the region’s food is deeply tied to the land. It’s a thoughtful way to learn, explore, and taste the Andes—all in one visit.
A Commitment To Sustainability And Community
At Mil, sustainability is at the heart of its operations. The restaurant works closely with local communities like Misminay and K’acllaraccay. Together, they grow native crops and protect traditional farming methods. This ensures ingredients are fresh, local, and ethically sourced, while also supporting nearby families.
