Raise your hands if you love gorging on sandwiches! Apart from being oh-so-delicious, one of my favourite reasons to enjoy sandwiches is the huge options ranging from both vegetarian and non-vegetarian. Banh Mi is Vietnam’s popular delicacy and it is mostly loaded with meat. If you do not consume meat, do not worry as we have the perfect recipe for vegetarian and vegan foodies out there.

Classic Banh Mi Is An Absolute Must Try!

Back in 2023, Taste Atlas announced Banh Mi as one of the 100 most famous Asian dishes. This Vietnamese variety of sandwiches is the perfect blend of toasted crusty baguettes and well-cooked stuffing. There are tons of variations of this popular delicacy.

While the recent approach to making banh mi is to add a stuffing of meat and seasoning and some veggies, people did not mostly add any veggies in the initial days of bringing this dish to the vast world of Vietnamese cuisine.

Well, it is time to add a vegan twist to this finger-licking sandwich recipe. Instead of pork or any other meat, you can use shredded raw jackfruit for the meat-like texture and lip-smacking taste. All the other ingredients will take care of the delectable aroma and flavours.

Here’s How To Make The Vegan Version Of This Yummy Vietnamese Sandwich

Ingredients: 

  • 1 Baguette
  • 1/2 cup Raw Jackfruit
  • 1/4 cup Carrots
  • 1/4 cup Cucumber
  • 2 tbsp Garlic
  • 1 Onion
  • 2 Green Onions or Scallions
  • 3 cups Vegetable Broth
  • 5 Cloves
  • 2 Star Anise
  • 2 tbsp Red Chilli Paste
  • 4 Coriander Sprigs
  • 2 Lemons
  • 4 Lemongrass Stalks
  • 1 tsp Maple Syrup
  • 1 tbsp Olive Oil
  • 1 tsp Soy Sauce or Tamari
  • 1 tsp Vegan Soy Sauce
  • 1 tbsp White Vinegar
  • 1 tsp Fish Sauce
  • Black Pepper Powder
  • Salt

Method: 

  • To make delish jackfruit banh mi, start by chopping and shredding all the veggies. Cut raw jackfruit into thin slices, wash properly, and use a colander to rinse.
  • Take a pan, add some oil, jackfruit, salt, garlic, red chilli paste, lemon juice, fish sauce, tamari, chopped scallions, and white vinegar. Cook everything for a couple of minutes on a low flame.
  • Meanwhile, make a mixture of salt, sugar, water, maple syrup, pepper powder, and vinegar. Take a bowl and add chopped carrots, cilantro leaves, and cucumbers, and pour the vinegar dressing on top. Let it sit aside for about 15-20 minutes.
  • Next, chop lemongrass stalks and saute it for a couple of minutes. To the same pan, add chopped onion and minced ginger.
  • Next, add veg broth and cook for some time.
  • Add cloves and stir anise as well.
  • Once cooked well, remove the extra broth and add the sauteed jackfruit.
  • It is time for the last step to make the sandwiches. Slice a baguette, toast with some butter, and add a layer of cooked jackfruit.
  • Add the prepared salad inside and relish!
