Here’s how you can make this delectable dessert at home:

Ingredients:

Instructions:

  1. Wash the rice thoroughly and soak it in water for about 30 minutes. Drain and set aside.
  2. Cut the litchis into halves or quarters, depending on their size.
  3. In a heavy-bottomed pan, bring the milk to a boil. Reduce the heat and let it simmer.
  4. Add the drained rice to the simmering milk. Cook on low heat, stirring frequently, to prevent the rice from sticking to the bottom of the pan.
  5. Once the rice is almost cooked and the milk has thickened, add the sugar and crushed cardamom pods. Stir well to dissolve the sugar.
  6. Continue to simmer until the rice is fully cooked and the milk has reduced to a creamy consistency.
  7. Gently fold in the litchi pieces and saffron strands (if using) into the payesh. Let it simmer for another 5–7 minutes to allow the flavours to meld together.
  8. Remove the pan from heat and let the Payesh cool to room temperature.
  9. Transfer the Lichti’r Payesh to a serving bowl. Garnish with chopped pistachios and almonds for an added crunch and visual appeal.
