Gary Mehigan, one of the original judges of MasterChef Australia is in India lately and trying the delicious food of our country. His latest stop is the city of Nawabs, Hyderabad. In a city that is already known for its food, if there’s one dish that takes the cake for popularity, it is the iconic Hyderabadi Haleem. Chef Gary Mehigan took to his Instagram and shared a video of this delicious iconic Hyderabadi delicacy in the making.

Haleem is easily one of the most iconic delicacies in Hyderabad and this Australian chef is definitely a fan. He shared a video of Haleem being made while raving about the dish. He went on to describe the process of how Haleem is made.

Mehigan starts out by saying that not everyone would find the appearance of the Haleem very appealing. However, its flavour is what Mehigan is blown away by. He describes how Haleem is cooked on low heat slowly for a long period of time in order to achieve a rich flavour and texture.

He then goes on to describe how the mutton is churned and pounded into the stew using ghotnis in order to achieve an almost stretchy consistency that is distinctive of Haleem. Gary even gives his audience a brief history lesson saying that the dish has its roots in Arabic cuisine and was transported to India by the Nizams.

Masterclass in Hyderabad

Chef Gary Mehigan is in Hyderabad for some time as he is also planning on conducting a MasterClass while he is there. This MasterClass he is planning on conducting alongside Chef Saransh Goila of Goila Butter Chicken.

The masterclass will be conducted on the 26th of April and will take place at the Trident Hotel at HITEC City near Kondapur. Attendees will receive hands-on training and will learn some of the two chefs’ most iconic dishes, including but not limited to the Goila Butter Chicken.

Visitors will also receive a certificate affirming their attendance at the workshop.
