Chef Saransh Goila is back with another fantastic recipe and we are excited to try it at home. This time, he shared a video of making a special Thai preparation named pineapple fried rice. The time has come to move on from pineapple pizza and cook this appetising rice delicacy at home.

Here’s The Recipe To Make This Thai Preparation

Pineapple Fried Rice

Ingredients:

  • 1 pineapple
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • Salt
  • 1 cup water
  • 1/2 tsp sesame oil
  • 1/2 tsp vegetable oil
  • 1 tbsp chopped garlic
  • 1 diced onion
  • 1 diced carrot
  • A few broccoli florets
  • Shrimp or Chicken
  • 1 tbsp curry powder
  • Crushed black pepper
  • Sugar
  • 2 tbsp light soy sauce
  • Fish sauce (optional)
  • Roasted cashew nuts
  • 1 diced tomato
  • Chopped spring onion greens
  • 1/2 tsp oil
  • 2 eggs

Pineapple Fried Rice

Method:

  • Start by cooking jasmine rice in a mixture of coconut milk, water, and salt.
  • Cover the ingredients and cook for about 15 minutes.
  • Next, take a kadhai and add sesame oil and vegetable oil. Saute chopped garlic and diced onion.
  • Add diced carrot, broccoli florets, shrimp/ chicken, and a splash of water and cook well.
  • Once veggies have softened, add cooked jasmine rice,  curry powder, salt, crushed black pepper, sugar, light soy sauce, and fish sauce. Toss everything nicely for some time.
  • Add diced pineapple, roasted cashew nuts, diced tomatoes, and chopped spring onion greens.
  • Cook all these for a couple of minutes and make a small pocket on the kadhai.
  • Add oil, and eggs, and scramble beaten eggs. Mix it with rice and pineapple fried rice is ready to be served.
  • Take a pineapple and divide it in half.
  • Remove its core and serve the yummy pineapple fried rice in the hollowed pineapple.
