Tim Darling is a British chef who runs an Indian food restaurant, Pappu Dosa, in the UK. At his restaurant, he serves everything from dosa and rabdi faloodas to chole bhature and medu vada. His aim is to bring authentic, high-quality Indian food to the streets of the UK.

At this point, we are not even surprised when we see foreigners fall in love with Indian food; the internet is filled with people trying the spice-rich Indian food and loving its flavours. However, have you ever come across a Brit who whips up this food like a pro? Well, meet British chef Tim Darling. He is running an Indian restaurant called Pappu Dosa in the UK. Tim Darling is a British chef who runs Pappu Dosa in the UK.  He grew up in Salisbury and struggled to find the right direction in his life. After moving through different jobs, he finally found his passion and comfort in cooking while working in Leeds and London. During his time in Leeds, he met Deepak, an Indian chef who introduced him to the rich flavour of Tamil Nadu and Kerala. Thanks to him, he started understanding the complexities of South Indian cuisine and became fond of it. 

For over 15 years, the chef learned Indian cooking from South Indian chefs and worked in both fancy French kitchens and small Indian eateries. During his training period, he not only mastered the art of preparing Indian food but also aimed to bring the taste of Indian street food to the UK. He wanted to maintain their authenticity and quality. And that’s how he established ‘Pappu Dosa’.

Bringing Authentic Indian Flavours To The UK

During the 2020 lockdown, Tim Darling started Pappu Dosa from a small caravan in Somerset. As demand grew, he moved to a van in Bradley Stoke, where his authentic, home-style flavours quickly won people over. What began as a modest venture has now expanded into two full-fledged restaurants, including an 85-seater flagship in Easton, Bristol, run with the support of his 11-member team. Now, Tim Darling wants to provide authentic Indian food to more people. His vision is to expand Pappu Dosa across the UK, India, the Middle East, and Asia, while staying true to the authentic taste.
