World-Famous Noma To Welcome Guests Again
“This August, we are coming home,” Noma announced on their website, and foodies worldwide breathed a sigh of relief. On its website, the restaurant announced that it will reopen its Copenhagen restaurant this August, describing the relaunch as the beginning of a new chapter rather than a return to its previous format.
The restaurant said a new leadership team will oversee day-to-day operations, with Mette Brink Søberg taking over as Head of Research & Development, Pablo Soto serving as Executive Head Chef, and Annika de Las Heras stepping into the role of CEO.
The restaurant also revealed a new dining concept called “Twelve Seasons of Noma,” under which every month will have its own distinct identity. Instead of the traditional seasonal menus, each month will be shaped by the ingredients at their peak, the surrounding landscapes, and the creative ideas inspiring the team at that time.
Noma described the concept as a major creative shift that will allow it to stay even closer to nature while giving its chefs greater room for experimentation and innovation.

A New Chapter Begins For The Restaurant
Despite the changes in leadership and format, the restaurant said its ambition remains unchanged—to keep exploring, learning and evolving into the best version of Noma yet. In its statement, they added that this vision extends beyond what’s served on the plate, with an equal focus on rethinking leadership, operations and the future of the restaurant. Thanking guests for their continued support, Noma said it is looking forward to welcoming diners back to Copenhagen and sharing what comes next.
Co-founder René Redzepi stepped away from Noma’s day-to-day operations following allegations of physical and psychological abuse made by dozens of former employees, as reported by The New York Times. While he said he did not recognise every detail of the accounts, he acknowledged that his actions had harmed some employees and apologised.
Going forward, Redzepi will focus on creative research involving insects, fungi and technology to help shape future Noma menus, while executive head chef Pablo Soto takes charge of the restaurant’s daily operations.
