How To Make This Healthy Pasta
Ingredients
• 75g semolina pasta (raw)
• 1 tsp oil
• 4–5 garlic cloves, chopped
• 1 medium onion, sliced
• 1½ cups purple cabbage, sliced
• Salt to taste
• 120g paneer
• 1 cheese slice
• ¼ tsp black pepper
• ½ tsp oregano
• ½ tsp chilli flakes
• 2–3 tbsp pasta water
• Fresh chopped coriander (for cooking and garnish)

Method
1. Boil the pasta until al dente. Reserve 2–3 tbsp pasta water.
2. Heat ½ tsp oil on high. Add chopped garlic and sauté until aromatic.
3. Add onion, purple cabbage, and salt. Cover and cook for 2–3 minutes on high until soft.
4. Transfer the cooked mixture to a blender. Add paneer and blend into a thick, smooth purple paste.
5. Heat the remaining ½ tsp oil in the pan. Add fresh chopped coriander.
6. Add the blended sauce, a little pasta water (as required), cheese slice, black pepper, oregano, chilli flakes, and adjust salt. Mix well.
7. Add boiled pasta and cook for 2 minutes on medium until creamy and glossy.
8. Garnish with coriander and extra seasoning if desired. Serve hot.
