It may look humble, but it’s something kids in Shillong have grown up eating after school, something locals still buy wrapped in newspaper cones for ten bucks. And now, it’s what Chef Nambie Jessica Marak (@masterchefnambiemarak) casually tossed together in an Instagram reel that’s making foodies across the internet salivate.

Aloo Muri is not your basic Bombay bhel. It’s funkier, with touches of mustard oil. There’s a zesty lemon punch and a fiery black masala that feels like Shillong in a spoon. People debate their favourite vendors, the same way Delhi argues about chhole bhature, and that’s how deep the connection to this snack runs.
Did you know that Bihari migrants are believed to have introduced the famous Aloo Muri snack? Shillong, true to its character, took the humble dish, remixed it, and infused it with a distinct Northeast soul. Today, Aloo Muri is as local as it gets. You’ll find tiny stalls selling it from 6 AM, especially around schools and markets. Some folks even throw in Wai Wai noodles or boiled eggs. It’s one of those snacks that you don’t just eat it, you remember it forever.

Shillong-Special Recipe

Ingredients:
- Boiled potatoes
- Muri
- Onion
- Green chilli
- Coriander
- Mustard oil
- Tamarind water
- Red chilli powder
- Roasted cumin powder
- Black salt
- Lemon juice
Recipe:
- Boil the potatoes until they are tender
- In a large bowl, add potatoes and puffed rice.
- Throw in chopped onion, raw papaya, green chillis, and coriander.
- Sprinkle black salt, red chilli powder and roasted cumin powder.
- Add some lemon juice for a zesty kick.
- Add the mustard oil as the earthy flavour.
- Mix everything together well.
