Its unique feature is the communal use of a bell-shaped metal plate called a Kansa Thal, which has its roots in Ayurveda and is thought to improve intelligence and treat acidity. By encouraging customers to share their food, the communal element promotes a sense of community and friendship.
The abundance of the Himalayan region is evident in each dish of ‘Pahadi Thal’ served at Jal & Jalebi by Ganga Kinare in Rishikesh. Using the healthful deliciousness of Desi Ghee, the restaurant elevates the freshest seasonal fruits and vegetables that it sources. The journey starts with a delicious Chaat made with Pahadi fruits that are in season. Winter brings the sweetness of Ramphal or Local Custard Apple, while in summer the refreshing flavours of Pahadi Malta and Chakotra or Pomelo are offered.

Gahat Dal, Pathode, Mandjholi & More!
The thali includes a comforting soup made with Gahat dal and Garhwali herbs for seasoning. Additionally, seasonal dish features Arbi, Lauki, or Palak leaves covered with gram flour, called pathode. Moreover, crispy papadi and steamed or deep-fried rice papadums go well with this. Mandjholi, a distinctive cold beverage produced from rice starch combined with spiced buttermilk and Garhwali salts in tastes like garlic, coriander, mint, and tulsi, goes well with the meal.
The meal’s main course is a culinary feast that includes items like Cholai (Amaranth) Ki Sabzi, Kashmiri Paneer, which is cottage cheese in a white sauce, and Aaloo Ke Gutke (baby potatoes). Himalayan Red Rice, or Lal Dhaan, is served with these delicious meals in Parola, a Garhwali village. Moreover, the thali includes appetisers such as Bhang ki Chutney, Kumaoni Raita, Amla Achaar, and a variety of Garhwal Greens.
Both stuffed bread varieties—one made with Gahat dal and the other with Kuttu flour—are served in the thali. Jaggery, Desi Ghee, locally sourced salts, hand-crushed onions, and a range of seasonings are known to enhance the taste.
Diners may indulge in their sweet tooths with Bajre ki kheer which is a type of millet pudding. Or the well-known roasted delicious brown fudge with khoya called Balmithai.
