Start by making the puris with semolina and ghee to knead it and make the small round puris. Make sure, you fry them well, so that they turn out super crunchy.
Instead of the usual tamarind water, take guava juice and add all the spices to it. Start with the various spices that you would usually add to the tangy water, like green chillies, black pepper, black salt, and chaat masala. You can even add the spices and masalas of your choice.
Instead of the usual chole or mashed potatoes filling, Chef Pankaj used pomegranate seeds and green coriander.
She made the serving by adding the juice to shot glasses and topping them with the stuffed puris.
