Our Editor-in-Chief, Kamiya Jani, stepped into the Amritsar home of the chef and not just enjoyed some amazing Punjabi food but also got a chance to peek into the life of one of India’s most celebrated chefs.

Vikas Khanna Says Indian Food Was Always Meant To Heal

For Vikas Khanna, Amritsar means ‘home’. Though he lives in New York, where he runs his restaurant, Bungalow, his heart still beats for Punjabi food, especially the meals cooked in his own kitchen at his home in Amritsar. We enjoyed a typical Punjabi feast at his home, including dishes like Rajma Chawal, Vadi Wale Chawal, Dahi Bhalle, and much more.

In between conversations, we naturally started talking about food. Honestly, who can even stop themselves from talking about food when Vikas Khanna is sitting right in front of you? Talking about that, Vikas Khanna shared that “Indian food was never meant to impress like Western cuisine; it was always meant to heal.” And honestly, this is something that is definitely true.

Indian Food Gives People Freedom To Express

With so much experience in his life, Vikas Khanna also expressed that, “Indian cuisine ko aap chote se box me nahi daal sakte.” (You cannot put Indian cuisine in one box.) This basically means that there are so many ways to cook Indian food that every kitchen has its own definition of Indian cuisine. The chef also said, “We are not standardised by any standards, which is the best thing that has happened to our food.” According to Vikas, Indian food also gives people the freedom to create and express.

After this conversation, Vikas Khanna shared some amazing food hacks with us. He also took Kamiya on a stroll through the streets of Amritsar to explore his favourite spots in the city. They indulged in local favourites like Bun Tikki, Aam Papad Chaat, A-One Kulfa and more!
