Dosas are known for their different variations that bring their own texture and taste. If you have ever been to Mysuru, you must have heard of the legendary dosa from Mylari Hotel. Unlike any other regular dosa, this soft dosa is thick, fluffy and spongy, making it extra unique and flavourful. Made with a well-fermented batter, it has a golden crust on the outside with a pillowy texture inside. Served with coconut chutney and mild vegetable sagu, the Mylari dosa is definitely a must-try.

2. Pesarattu Dosa

Straight from Andhra Pradesh, pesarattu is another form of dosa that is considered super healthy. It is a protein-packed green gram dosa which is made of moong dal, perfectly blended with ginger, green chillies and cumin. Topped with onions and served with upma or coconut chutney, pesarattu is both delicious and wholesome.

3. Ragi Dosa

Also known as finger millet, ragi has become one of the most popular dosa varieties, thanks to its impressive nutritional profile. Ragi dosa brings a slightly grainy and rustic texture with a deep, earthy flavour. Ragi dosa can be made both crispy and slightly soft. Often served with spicy chutneys, it is known as one of the best breakfast dishes in South India.

4. Neer Dosa

This dosa is known for its delicate and almost translucent texture. Neer dosa from coastal Karnataka is made with a thin rice batter that requires no fermentation. The batter is then poured in a way that creates an intricate detailing pattern across the pan. Pair it with coconut-based curry or chicken ghee roast for a delectable taste.

5. Set Dosa

As the name suggests, set dosa is served in a set of two or three. It is thicker than regular dosa but softer than Mylari; these dosas are known for their small sizes, fluffy discs and slight sweetness. Usually paired with vegetable sagu and chutney, set dosa is another comforting and filling dosa for a lighter breakfast.
