Delhi is getting ready to welcome world leaders and international delegations for the 18th BRICS Summit, and the preparations aren’t limited to security and accommodation. Food is also getting a diplomatic makeover, with luxury hotels across the capital preparing menus tailored to the preferences of different delegations. Here’s what’s on the menu for world leaders and delegates.
Hotels Are Creating Delegation-Specific Menus
The BRICS Summit will take place in New Delhi on September 12 and 13, with delegates from member and partner countries arriving in the capital. Several luxury hotels are hosting visiting dignitaries and their teams, turning their kitchens into an important part of the summit preparations.
At The Leela Palace New Delhi, chefs are working closely with embassy officials and delegation teams to understand their food preferences and prepare customised menus. According to a PTI video, the hotel’s chefs are carefully curating meals for different delegations, making sure their culinary preferences are taken into account.
The preparations go beyond simply recreating familiar dishes. Chefs have arrived with their own equipment to work alongside the hotel’s culinary team, while some delegations have also brought in specific ingredients. The hotel’s restaurants and in-room dining are also featuring special dishes from Jamavar, its Indian restaurant.
The LaLiT New Delhi is also preparing for international delegations, with its breakfast spread being adapted to include dishes associated with participating countries. The hotel is also planning country-specific touches across its in-room dining and guest amenities.
At the same time, the hotel is looking to introduce international guests to Indian cuisine. Its Baluchi restaurant and Indian food offerings will showcase familiar Indian dishes, while the in-room dining menu includes options such as butter chicken, mutton rogan josh, dum aloo and rajma.

What’s On The BRICS Delhi Food Menu?
The food spread prepared for the BRICS guests is designed to showcase India’s diverse culinary traditions while also keeping health and dietary preferences in mind. According to a Jagran report, millet-based dishes are expected to be a highlight, with ragi dosa, bajra upma and millet pongal featuring on the menu. Fresh seasonal fruits, coconut water and fresh buttermilk will also be served.
For lunch, guests can expect flavours from across the country, including Gujarati, Rajasthani and South Indian thalis. The wider menu also brings together dishes such as Kashmiri pulao, Deccani tadka, Hyderabadi vegetarian and non-vegetarian biryani, and South Indian stews.
Indian cuisine will take centre stage at dinner too, with Awadhi kebabs, tandoori dishes and slow-cooked Indian gravies being prepared for foreign dignitaries. Separate vegetarian and non-vegetarian sections, along with dedicated chefs, are also being arranged to accommodate everyone’s personal food preferences.
For guests who prefer lighter meals, live cooking counters will offer customised continental breakfasts prepared without oil and spices. The idea is to give international visitors a taste of India’s regional food while ensuring that their individual dietary requirements are not overlooked.
Food safety is also being closely monitored. According to reports, raw ingredients, spices and bakery products used by hotels are undergoing regular testing, while food safety officials and microbiologists are being deployed to check quality and hygiene before dishes are served.
