If you thought your favourite white sauce pasta couldn’t be creamy without maida (refined flour), restaurateur Kabir Chugh is here to prove you wrong! Recently, he took to Instagram to show how to make a rich, velvety pasta sauce without a single gram of maida. His recipe proves that indulgent, creamy pasta doesn’t need unnecessary refined flour; it’s time to rethink the way white sauce has traditionally been made.

Restaurateur and chef Kabir Chugh frequently shares hacks and easy tips on social media that both restaurant owners and home cooks can try. His recent fresh dhaniya hack was a hit in many households, so we decided to browse his Instagram again, and once more, we stumbled upon another culinary gem!

He taught his followers how to make white sauce for pasta, without using any maida! To start, he clarifies that there is no “white sauce”! “It’s either a cheese-based sauce or a tomato-based sauce. What you are making at home is a nonsensical maida ki khichdi,” he said in the video.

Here’s How You Can Make It At Home

He then goes on to share that people often use maida, cheese, and milk to make the sauce. The thick paste might look desirable, but according to Chef Kabir, it’s not what your pasta should have! He shares the swaps for these ingredients to make sure you make a luscious sauce at home. For his first swap, he suggested taking cream instead of maida. Then, he said one must take Parmesan cheese instead of milk for a good flavour and texture.

For making the pasta, he suggests, “Take a pan and add some oil to it. Throw in some chopped garlic and lightly sauté till you see the first sign of colour, then add water to stop the cooking. Now add some cream to the boiled pasta and let it simmer.”

“Add salt to it, and when you see it just about close to the right consistency, shut the gas. Add cheese and frozen butter, and keep stirring. As the butter and cheese melt, they will create a beautiful emulsion with a shine. You can finish with some parsley if you like. This is your base cheese sauce-based pasta. Now you can add pesto to this to make a pesto-based pasta, or add lots of black pepper, and it’ll become a version of cacio pepe. You get the point. Enjoy!” he ended his post with this suggestion.
