Chef Kunal Kapur Shares A Wholesome Khichdi Recipe
We believe that food doesn’t always have to be fancy to be flavourful and you can make even the most basic dishes delicious by adding the right flavours. And looks like chef Kunal Kapur agrees with us on this! He recently gave the humble khichdi a nutritious upgrade, and you just can’t miss this recipe.
Taking to social media, the chef shared a recipe for Millet Masala Khichdi made using four types of millets—Foxtail Millet (Kangni), Pearl Millet (Bajra), Sorghum (Jowar), and Barnyard Millet (Samak Chawal). He added that these millets help boost your daily fibre intake. The recipe is simple to prepare and comes together easily in a pressure cooker with minimal effort.

Here’s How To Make Millet Masala Khichdi
Ingredients
For Khichdi –
Foxtail Millet – ¼ cup
Pearl Millet -¼ cup
Sorghum – ¼ cup
Barnyard Millet – ¼ cup
Moong dhuli dal – ¼ cup
Masoor dal – ¼ cup
Toor dal – ½ cup
Turmeric – ½ tsp
Salt – 1 tsp
Water – 7 cups
For Tempering –
Ghee – 3 tbsp
Dry Red Chilli – 2
Heeng – ½ tsp
Mustard seeds – 2 tsp
Cumin – 2 tsp
Curry leaves – a sprig
Onion chopped – ½ cup
Ginger chopped – 2 tsp
Garlic chopped – 1 tbsp
Green chilli chopped – 1 no
Turmeric – ½ tsp
Chilli powder
Salt – to taste
Tomato chopped – 1 cup
Water – as required
Kasoori methi powder – a pinch
Lemon – ½
Coriander chopped
Method
1. Combine the four millets and wash them thoroughly.
2. In a pressure cooker, add the washed millets along with the dals mentioned above, turmeric powder, salt, and water.
3. While the khichdi cooks in the pressure cooker, prepare the tempering.
4.In a kadhai, heat some ghee and add dry red chillies, hing, mustard seeds, cumin seeds, curry leaves, chopped onions, and ginger. Let it cook until aromatic.
5. Add the dry spices along with the chopped tomatoes and cook well.
6. Add this tempering to the cooked khichdi and mix well.
7. Garnish with some kasoori methi, chopped coriander, and a squeeze of lemon before serving.
Enjoy with some roasted papad and dahi, and your new wholesome comfort dish is ready to be enjoyed!
