In his latest Instagram post, Vikas Khanna shared a photo from two decades ago when he worked at Purnima Restaurant in Times Square. Along with the image, he wrote a heartfelt caption about his “long journey”, which he described as “worth every step”. He recalled how, as a young boy, he never imagined that his passion, consistency, and love for Indian food would one day carve out a space for Indian cuisine in the Western world.
A Promise Made To His Grandmom
In this post, Vikas Khanna also mentioned his family’s role in his journey. He recalled telling his grandmother back in 2000, “I’m going to America to win an award no Indian chef has ever received — The Michelin,” and how he has remained true to that promise. He remembered his late sister Radha’s words, “Making a restaurant is easy. Creating a shrine for Indian cuisine and culture is the true step forward,” and his mother’s guidance that kept him motivated through difficult times. His mother once told him, “Raise the waters so high that every boat of our country shall rise with pride.”
Vikas Khanna ended the post by writing that with the “same devotion and passion,” he welcomes hundreds of guests every day at his restaurant. For him, it is not just about serving food, but also about carrying forward the “spirit of India.”
