He also revealed the dish that earned him a special word of appreciation from Prime Minister Narendra Modi.

Rajasthani Dishes Stole The Show At President Murmu’s State Dinner

During an episode of Insight with Akankshaa, chef Saurabh Sharma shared his experience of curating a five-course meal for the state dinner hosted by President Droupadi Murmu in honour of South Korean President Lee Jae Myung. The banquet was attended by Vice President C.P. Radhakrishnan, PM Narendra Modi, several cabinet ministers, along with several senior dignitaries from India and South Korea.

When asked about the menu, the chef revealed that the menu included Silver Dal, also known as Chandiwali Dal. He explained that his intention was to challenge the common perception of Rajasthani cuisine and showcase its rich flavours beyond the dishes it is traditionally associated with.

He also served dishes like Daag Dana Meethi Sabzi, Chana Dal Kalmi Vada, Jowar Salad, millet soup, and even Kheer served in a millet tart!

Among all the dishes on the menu, the Silver Dal, or Chandiwali Dal, emerged as the star of the evening. Chef Saurabh Sharma explained that the dish is as intriguing as its name, thanks to its rich texture, subtle flavours, and unique preparation. In ancient times, the dal was cooked in silver cookware so that traces of the metal were infused into the dish. Now, however, people introduce a silver element while soaking the lentils.

What makes the dal even more distinctive is that it is cooked entirely in milk instead of water, giving it a creamier texture, richer flavour, and an added boost of protein. Finished with a simple tempering, the dish is elegant, comforting, and delicately flavoured.

Chef Saurabh Sharma added that this may be one of the reasons PM Narendra Modi enjoyed the dish so much, as he prefers simple, non-spicy food. According to the chef, the Prime Minister later thanked the culinary team for serving such a memorable Rajasthani feast.
