Jams, Jellies and Marmalades are all used as spreads on toast or in baking. However, marmalade is also sometimes used in savoury dishes. This is because of its slight bitterness. This better taste is because marmalades are made from citrus fruits, peels included.

The addition of peels gives it the marked bitterness that marmalades are known for. Jams and jellies, on the other hand, are sweet and fruity. Jams are made from fruit pieces whereas jellies are made from fruit juices. Hence, you will sometimes find pieces of fruit in jam but not in jellies.

The fresh fruit also gives jams a distinct texture, consistency and flavour. They taste like fruits, are easily spreadable and have a grainy texture. Jellies have a fruit-like flavour, are firmer than jams and cannot be spread on bread as easily as jams.

At this point, you may raise another question – what is the difference between jams and fruit preserves? Well, the words preserve and jam are used interchangeably in many parts of the world. However, there are a few subtle differences.

Jams are made from chopped or cut fruit. Preserves, on the other hand, are made from whole fruit. You will therefore find that preserves are chunkier than jam and have bigger fruit pieces in them. All four are commonly used as spreads or in baking.
