Chef Kaoru Nakada began her journey in creating delicious and tempting pastries back in France. A journey, which began a decade ago, is today culminating in her opening her own little kitchen in Dubai, Kaoru Patisserie. And as the final details fall in place, we got to chat with the master of desserts herself! Offering French desserts with a Japanese twist, she is currently only taking limited orders. So, here’s all you need to know about the story behind this new brand and the talented chef.

A Journey That Began A Decade Ago

Bringing decadent desserts that are a fusion of French and Japanese culinary techniques, Kaoru Patisserie is already creating a buzz. Chef Kaoru Nakada has trained in France at renowned kitchens, such as Four Seasons George V, Fauchon Paris, and with Alain Ducasse. She has, in her words, “Built a strong foundation in classic French pâtisserie; a technical backbone that continues to shape my work.” However, it’s the Japanese Heritage that’s at the heart of her work. She said, “Over time, I found my voice by blending the precision and artistry of French technique with the subtlety and soul of Japanese flavours.”

A Deep Sense Of Pride in Japanese Traditions

While she moved to Dubai in 2021 to join Jumeirah Mina A’Salam as Pastry Sous Chef, now she is moving on to open her own brand. And while talking about her inspiration to open this kitchen, this is what she said, “After years of working in hotel pastry kitchens in Paris, Tokyo, and most recently Dubai, I wanted to create something that felt personal and true. Kaoru Patisserie is the culmination of my experiences and culture, something that feels both refined and deeply human. I also wanted to build a space where Japanese elegance meets French craftsmanship, all while making it feel warm and approachable.”

Adding further, she explained, “Being Japanese, I carry a deep sense of pride in tradition, detail, and purpose. But now, having found a second home in the UAE, I also feel inspired by its spirit of innovation and openness. I hope to represent both with integrity.”

A Variety Of Desserts Blending French & Japanese Influences

Talking about the variety of desserts offered at Kaoru Patisserie, she said, “We offer a range of refined, plated and boxed desserts; roll cakes, citrus tarts, layered mousse cakes, and also delicate seasonal items inspired by wagashi (traditional Japanese sweets). Our offerings balance flavour, texture, and beauty, without ever being overwhelming.” And as you might have gather, these are all fusion desserts in some way, so explaining about the dessert, she said, “In my kitchen, every dessert is built on a classical foundation but carries a gentle Japanese influence whether it’s the use of matcha, yuzu, kinako, or even the way a dessert is plated or wrapped. So yes, this identity is at the heart of every piece we make.”

And talking about signatures, she recommended Wagashi-concept pastry. Explaining why, she said, “This is one of my most personal creations; a delicate flower-shaped dessert inspired by traditional Japanese sweets. It features layers of vanilla bavaroise, raspberry confit, creamy matcha, red bean sponge, and a crisp matcha rice base. This piece represents everything ‘Kaoru’ stands for: cultural heritage, refined technique, and quiet beauty.”

Creating New Desserts, Official Opening Of Kitchen & Ordering

But the work doesn’t stop there! Always working on creating new masterpieces, she said, “I’m currently working on new creations featuring black sesame, cherry blossom, and shiso flavours that are deeply rooted in Japanese tradition. The goal is always to surprise gently; to take something comforting and give it a little twist of the unexpected”

At this stage, it’s worth mentioning that the kitchen is currently in the final stages of construction. And the commercial kitchen is expected to officially open within the next one or two months. She said, “Once our kitchen is fully operational, we’ll expand into boutique deliveries and collaborations with select restaurants.”
