This milk pudding is actually made using buffalo or cow’s colostrum milk. By colostrum milk, we mean the milk that is produced by these animals within one or two days of giving birth.
The sweet is very soft and simply melts into the mouth. You actually do not even have to properly chew it. The taste is simply heavenly and is one of the simplest yet most delicious sweets India’s dessert menu has.
Colostrum milk is not accessible to all and is not available for 365 days, so there are many recipes that show how this sweet can be made a bit differently.

Controversial Sweet of India
According to a video posted by @foodie_incarnate, this milk pudding is said to be one of the most controversial sweets in India.
The reason behind this might be the fact that it is called by different names in different states, cities, villages, and languages. There are many different ways of preparing this sweet. Just like in the video, the vendor sells this white sweet in more than three different colours.
In Mumbai, you can find this sweet very easily on the streets. This sweet is also very nutritious, as colostrum has many minerals and micronutrients. It also boosts immunity and is very effective in treating allergies.
Netizens were seen commenting on the names by which this dessert is known at their place. One person said that it is known as Bari in Marwadi and Gujarati. Another mentioned that in Mumbai it is known as Balli Malai or Malai and Kharwas in Maharashtra. It is known as Piss in Sindhi, as per another comment under the video. In Madhya Pradesh, it is known as Chik, and in Peyush, in Chhattisgarh.
