Usually relished with evening chai, chochwor is an iconic bread typically found in Kashmir. MasterChef India’s Chef Rukhsaar Sayeed shared an elaborate reel explaining the process of making these delicious bread pieces at home. To make these tasty bites resembling bagels, you do not need an oven. Following Chef Rukhsaar Sayeed’s reel, you can prepare them in a pressure cooker.

Here’s How To Prepare Soft Traditional Kashmiri Bread

Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 cup warm water (adjust if needed)
  • 1 tbsp oil or melted butter
  • 4 cups water
  • Sesame seeds
  • Milk

Recipe:

  • Start by kneading a soft dough. The first step is to mix sugar and yeast in warm water and keep it aside for 5-10 minutes.
  • Meanwhile, mix flour, salt, and butter in a bowl. Once the yeast mixture turns frothy, pour it into the flour bowl. Knead gently into a smooth dough and cover it well. Let it rest for over an hour. It needs to rest well till its size increases twice.
  • Once done, divide the dough into equally sized dough balls. Use your fingers to create a hole in each ball and give them ring shapes.
  • Meanwhile, boil water and add baking soda and sugar.
  • Boil every side of chochwor for 30-60 seconds.
  • In the next step, brush them gently with milk. Sprinkle sesame seeds right after.
  • This is an extremely crucial step. Before preheating a pressure cooker, remove its rubber gasket and whistle. Preheat it for 10 minutes.
  • Sprinkle salt water and steam for some time.
  • Add a little amount of water on every chochwor’s bottom side and place them on the cooker’s side (as shown in the video).
  • Cover with the lid and pressure cook for at least 3 minutes.
  • Next, flip it upside down and cook for 5-7 minutes.
  • Make sure each chochwor gets enough direct heat to turn golden beautifully.

Homemade chochwor is ready to relish. Slice it, add loads of butter, dip it in noon chai, and enjoy.
