Trust former MasterChef Australia judge, Gary Mehigan to flood his Instagram page with amazing recipes from across the world. But our favourites have got to be the Indian-cuisine-loving Australian Chef preparing dosas and spinach pakoras in his home kitchen. Adding yet another desi food post, Chef Gary Mehigan tried his hand at making the South Indian breakfast favourite medu vada. His Insta videos and photos will have you drooling!

Chef Gary Mehigan Documents His Medu Vada Cooking Experience

Chef Gary Mehigan documented his experience preparing medu vada for the very first time. South Indians of the ‘Gram are delighted. In his caption, the Australian chef confessed to never having made it before. But after lots of tips from his Indian friends he is getting better at it. In his words, medu vada is a light, crispy savoury doughnut made with Urad dal or black lentils which are split and skinned.

In his videos, the Chef is seen explaining that the texture must be light, fluffy and aerated. He even shared a helpful tip to know if you have nailed the medu vada batter. All you need to do is scoop a little bit of batter and put it into a bowl of water. A perfect batter would float high up in the water. His video proves how. And then, the Chef goes on to deep fry the. The medu vadas come out golden brown, crispy on the outside and soft on the inside.

Here’s What Went Into His Batter

What went into the batter? Well, the Chef added salt, chopped coriander, freshly chopped coconut, green chillies and curry leaves into the batter— consisting of half rice to urad dal ratio. The result? Gary Mehigan calls it the lightest and crispiest result so far. But he did admit to needing a better grinder and more practice. Yes, foodies, even the best chefs in the world swear that practice makes the first best…. medu vada, in this case.
