UAE Gets Its 1st Bellwether Shop Roaster At Kairos Coffee Assembly In Al Quoz

Dubai’s Al Quoz has a new coffee stop, but Kairos Coffee Assembly is not trying to be another grab-and-go café. Tucked inside the Al Quoz Creative Zone, the newly opened space puts the roasting process right in the middle of the room, with the UAE’s first Bellwether Shop Roaster producing fresh coffee in full view of guests.

Kairos Coffee Assembly Opens In Al Quoz With UAE’s First Bellwether Roaster

The idea is simple enough: slow down, drink better coffee, and actually spend some time where you are. Even the name Kairos comes from an ancient Greek word referring to the right or meaningful moment, rather than time measured by a clock.

The Roaster Is The Main Attraction

Walk into Kairos, and the first thing that stands out is the Bellwether roaster.

Unlike traditional roasting setups that are usually hidden away, this fully electric machine sits openly inside the café and handles the coffee in small batches. Kairos says the Bellwether reduces CO₂ emissions from the roast cycle by 87% compared with traditional gas roasters, eliminates harmful VOCs through internal afterburner technology, and operates without direct combustion emissions.

That also means guests can watch the beans being roasted rather than simply being told where their coffee came from.

Kairos sources beans from high-altitude farms and roasts them on-site, with three single-origin coffees brewed fresh each day. Current offerings include beans from Kenya, Colombia and Ethiopia, each selected for its own flavour profile. 

Coffee Here Is Meant To Be Unhurried

The café is built around what it calls the Coffee Assembly, a two-metre circular communal table hand-carved from a single block of stone by Surat-based SHED Studio.

It is also where guests can watch the V60 pour-over ritual, turning a regular coffee order into something a little more interactive. The space follows a pared-back, Wabi-Sabi-inspired approach, with an open layout, natural materials and very little visual clutter. 

Come Hungry, Too

Coffee is obviously the main event, but Kairos has built a proper food offering around it.

Everything is made from scratch on-site, including pastries baked fresh before opening. The menu includes a Twice-Baked Cashew Nut Croissant, Eggs on Eggs on Eggs, and a Steak Short Rib Bowl with avocado and mango. For something sweet, there are also Max’s Madeleines, including combinations such as brown butter, dark chocolate and sea salt. 

The café is also keeping its creative-district address firmly in mind. Its walls will host rotating exhibitions and collaborations with artists and local creative studios. The current feature is What Remains of Faces, a ceramic wall mural by Kamal Alzubi created from 30 individually hand-pressed pieces, in collaboration with the UAE-based House of Clay.

A Coffee Spot That Wants You To Stay

Founder Shiraz Sarwar, who previously built a delivery-only coffee business, says opening Kairos was partly about creating the kind of face-to-face connection that delivery could not offer.

That philosophy is pretty much written into the space. There are coffee tastings, cupping sessions, curated gatherings and a rotating programme for artists and creatives, so the café is designed to become more of a community meeting point than a place to pick up caffeine on the way to somewhere else. 

And perhaps that is what makes Kairos interesting. In a city that is rarely accused of moving slowly, this new Al Quoz café is deliberately asking you to do exactly that.
