This is a dessert that levitates! The Floating Chocolate is not called ‘floating’ for no reason. The dessert uses magnets and nitrogen that literally make it float mid-air. The dessert consists of chocolate truffle, made with 70 per cent dark chocolate, with a gooey chocolate centre. Nitrogen fumes are passed through the centre of the truffle using molecular gastronomy.
