Her recipes never fail to surprise us and Old Monk chicken is surely something that many of us have never expected before.

Old Monk Chicken

Ingredients:

  • 500g chicken wings
  • 500g chicken thighs
  • 4-5 tbsp honey
  • Salt
  • 2 tbsp ginger-garlic paste (green chilli, red chilli, and black pepper are added too)
  • 1 tbsp soy sauce
  • 2 tbsp sriracha sauce
  • 375ml of Old Monk rum
  • 2 tbsp sesame oil
  • 10-15 sliced garlic cloves
  • 1 slit green chilli
  • 1 cup finely chopped onion
  • 1 tbsp vinegar
  • 2 tbsp ketchup
  • Spring onions to garnish
  • Sesame seeds to garnish

Follow these steps:

Old Monk Chicken

  • Start preparing Old Monk chicken by marinating the meat with honey, ginger-garlic paste, soy sauce, salt, and 1 tbsp sriracha sauce.
  • Add Old Monk rum to chicken pieces and mix all ingredients gently. Keep the fresh mixture aside for about 30 minutes.
  • Next, transfer the marinated chicken into a pan and cook till the chicken pieces turn golden brown.
  • Add a small amount of marinated liquid mixture in between the searing process.
  • Take a separate pan or a wok and heat some oil. Saute garlic slices and chillies.
  • Next, fry finely chopped onion till the texture turns translucent.
  • Follow these steps by adding soy sauce, vinegar, ketchup, and 1 tbsp sriracha sauce. Cook all these for a few minutes.
  • Once done, pour the leftover Old Monk mixture. Continue cooking till the gravy thickens.
  • After the gravy has reduced, add pan-seared chicken pieces to the gravy and toss nicely.
  • Lastly, add a flambe of Old Monk rum to the chicken preparation for that much-needed smoky flavour.
  • Garnish Old Monk chicken with spring onions and sesame seeds and enjoy.
