When it comes to Kashmir’s local taste and cuisine, Chef Rukhsaar Sayeed is one of the most wonderful chefs to take inspiration from. And this time, we are excited for mouth-watering Kashmiri kehwas.
How To Make Kong Kehwa?
Ingredients:
- 6-8 saffron strands
- 2 cardamom pods (pounded)
- 2 cups water
- Sugar or honey
- 1 tbsp almond slivers
Recipe:
- Start by soaking saffron strands in 2 tbsp of hot water for about 5 minutes.
- Meanwhile, pour water into a cooking pot, add cardamom pods, and boil.
- Next, add the soaked saffron extract and sugar/ honey in water.
- Simmer for a couple of minutes.
- Pour in cups and garnish with almond slivers.
How To Make Kashmiri Dodh Kehwa?
Ingredients:
- 2 cups milk
- 6-8 saffron strands
- 2 cardamom pods (pounded)
- Sugar
- 1 tbsp almond slivers
Recipe:
- Start by boiling milk with cardamom pods and saffron strands.
- Add sugar, stir, and simmer for 5 minutes.
- Serve in cups, garnish with almond slivers, and Dodh Kehwa is ready.
How To Make Mulethi Kehwa?
Ingredients:
- 1 tsp mulethi (liquorice root)
- 1 tsp sepistan (lisoda)
- 1 small cinnamon stick
- 2 cups water
- Sugar
Recipe:
- Pound the mulethi, sepistan, and a cinnamon stick gently.
- Add them in water and boil for around 10 minutes. Add sugar too while boiling.
- Strain the Mulethi Kehwa well and serve hot.
How To Make Green Tea Kehwa?
Ingredients:
- 1 tsp green tea or noon chai leaves
- 1 small cinnamon stick
- Sugar
- 2 cups water
Recipe:
- Start by boiling water with a cinnamon stick and sugar.
- After some time, add green tea leaves to boiling water and simmer for 3-4 minutes.
- Strain the Green Tea Kehwa and serve hot.
