MasterChef Australia S13 fan favourite Depinder Chhibber often takes to her Insta handle to share delicious desi recipes from all across India. This time, she shared a recipe of one 0f her favourite desserts— Ela Adas. Originating from the coast of Kerala, these banana leaf-steamed rice flour pancakes cradle a sweet coconut-jaggery filling. Read on to check out her recipe and prepare this warm delicacy during the chilly winter in India.
MasterChef Depinder Chhibber Shares Her Fav Recipe For Ela Adas
Depinder Chhiber shared an aesthetic reel of herself preparing Ela Adas from scratch. In the caption, she also shared a detailed recipe for dessert lovers to prepare this sweet steamed rice pancake from scratch. She writes, “When life gives you fresh coconuts, make Ela Adas”. Naming Ela Adas one of her favourite desserts and calling it easy to make, the chef says that one can use desiccated coconut or frozen shredded coconut instead of fresh ones.
Meanwhile, she goes on to share a detailed recipe of the delicacy from Kerala.
Ingredients
- 1 cup grated coconut
- 1 tbsp ghee
- 3/4 cup jaggery
- 1 cup rice flour
- banana leaves
- Cardamom powder
- water
Method
First, take 1 tablespoon of ghee and add it to a pan. Once the ghee melts, add 1 cup of coconut and 3/4th cup of jaggery to the cup. Mix this well and let the jaggery and coconut come together to form the filling. Then, add a pinch of cardamom powder to elevate the taste. After you have mixed the ghee, jaggery, desiccated coconut and cardamom powder over medium heat, leave it aside to cool down.
Meanwhile, take 1 cup of rice flour and toast it. Add boiling water approximately 1 cup of as needed to prepare a dough. Then, add ghee between your fingers and palms and flatten these rice flour dough balls on fresh banana leaves. Make them in the shape of pancakes and add the jaggery mixture to it that you prepared a while ago. Steam these for 10 to 12 minutes and serve them hot and fresh. Your Ela Adas are ready!

Not Just Kerala, Even Karnataka Has A Similar Delish Sweet
Apart from Kerala, even Karnataka has its own version of Ela Adas called Patholis. These are rice pancakes steamed in turmeric leaves, which lend them a beautiful perfume. Like Ela Adas even Patholis have a sweet jaggery-coconut filling. It’s often prepared during festivals like Ganesh Chaturthi, Gauri Puja and Nagarpanchami festivals. This sweet dish, once prepared, is first offered to God and then distributed as prasad amongst the devotees. As coconut is commonly found in the coasts of Kerala and Mangaluru, Ela Adas and Patholis are popular.

Moreover, they are also healthy as unlike many other Indian sweets that are not deep-fried and don’t use processed sugar and a lot of dairy. Also, it’s very easy to prepare vegan version of these sweets.
