Ingredients
- 1 kg of mutton
- 1 litre of water
- 10-12 black peppercorns
- 5-6 garlic cloves
- 1-2 whole red chillies
- 5-6 garlic cloves
- 1 whole green chilli
- 1/2 teaspoon of cumin powder
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of garam masala
- 1 teaspoon of salt
Method
- First, season the mutton pieces with salt, pepper, turmeric powder and refrigerate it.
- Then, boil water in a kadai and add garlic cloves, black peppercorns, dried red chillies, and green chilli.
- Add the marinated mutton pieces into the kadai and cook over medium heat.
- Close the lid and let the meat cook in its own steam.
- Once the water evaporates and the meat combines, season it with cumin powder and garam masala and mix well.
- When the meat starts leaving its fat, let it cook for a few more minutes and take it off the flame and plate it. Your Mutton Water Fry is ready!

The simple no-oil mutton recipe won a lot of fans in the comments section. A netizen remarked that they tried Pandey’s no-oil chicken recipe and it turned out well. Another person remarked how her mother used to cook mutton for her dad by marinating the meat in curd and spices and cooking it in water. A commenter replied that the dish had an Arunachali variant as well.
