Ingredients:
- 1 cup rice flour
- 2 cups coconut milk
- 1 cup jaggery
- 1 cup water
- 1 tablespoon ghee
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon cardamom powder
- 1 pinch of salt
Method:
- Put the water and jaggery pieces in a pan. Cook over medium heat until all of the jaggery has dissolved. Strain the syrup after it has dissolved.
- Heat some ghee in a big saucepan over low heat. Gently mix in the coconut milk. Add the rice flour to the coconut milk gradually while whisking constantly to avoid lumps.
- After the rice flour is thoroughly combined, mix in the cardamom powder, cloves, cinnamon, jaggery syrup, and a pinch of salt.
- Now, cook this mixture while stirring continuously over low heat for about 45 minutes to 1 hour.
- As you cook, the mixture will slowly thicken. It should have a fudge-like consistency but still be pourable.
- Once the mixture has reached the right consistency, pour it into a greased tray or mold. Let it cool to room temperature.
- After cooling, refrigerate until it is set properly.
- Once set, cut the dodol into small squares or diamond-shaped pieces. It’s ready to be served!
