  • Grab a small bowl or a cup and prepare a mixture using warm water, honey, and active dry yeast.
  • Next, prepare two separate doughs of green and blue colours.
  • For blue dough, knead all-purpose flour with matcha, salt, and proofed yeast mixture.
  • Follow the same process as the blue dough. Just make sure to replace matcha with blue matcha.
  • Knead all ingredients to make non-sticky textured colourul and soft doughs.
  • Once done, cover them and keep them aside at a warm place for around 90 minutes.
  • After the freshly prepared doughs have rested well, roll out them into rectangular shapes. Make sure to use extra flour while rolling them with a rolling pin.
  • Next, layer green dough on the blue one slightly unevenly to get a globe-like appearance. Roll them just like you roll an egg roll.
  • And then, roll the sausage-like dough into a small ball.
  • Take a knife and cut the earth-like dough ball into 4 parts.
  • Using your palms, shape 4 portions into spheres.
  • Next, use your finger to make a small hole and gently expand to get a bagel-like structure. Make sure to not expand it too much.
  • Once down, place all the bagels on parchment paper and let them rest for half an hour.
  • Meanwhile, start boiling water and add a tablespoon of brown sugar to it.
  • Place all bagels gently into water and boil them for 2 minutes, 1 minute for each side.
  • Once done, place them on a baking tray, brush them with milk and melted butter, and put them inside a pre-heated oven.
  • Bake these delights at 220°C for 25 minutes.
  • Once baked well, let the earth bagels cool down.
