CT Review: From Kalari Cheese To Housemade Mustard Sauce, The Little Things That Make Dos By Tres The Must-Visit Spot In Delhi!

The culinary scene in Delhi is nothing short of spectacular. No matter what cuisine you’re craving, there’s a top-notch restaurant ready to serve it. However, one aspect that has been missing is a place that brings together street food from around the world. Enter Dos, located in the heart of New Delhi, was created by chefs Jatin Mallick and Julia Carmen Desa, the co-founders of the award-winning Tres. Known for revolutionising Delhi’s fine dining, their second venture, Dos, brings an imaginative take on global street food, blending innovation with authenticity.

At Dos, you can get the refined service and atmosphere of a fine-dining establishment combined with the laid-back atmosphere of a club. Dos’s interior design, which combines modern, colourful details with parts of colonialism that have been subtly dismantled, is a celebration of duality.

Stepping inside, especially in the evening, feels like entering a serene café in the mountains—a rare and tranquil escape in bustling Delhi. The separate al fresco dining area adds to the charm, resembling a green oasis. The design includes a private lounge and dining area with its own bar.

The restaurant features a unique wall sculpture of traditional crockery that unifies the thematic fusion of its modern art lined walls. With the artwork removed to create the ideal backdrop for exuberant evening revelry, the atmosphere at Dos drastically changes from day to night. One standout feature is the warm, inviting aroma of freshly baked bread.

Breads, Burgers, And Beyond

The food at Dos is a symphony of flavours and textures, beginning with their freshly baked breads. The warm aroma of these breads creates an inviting atmosphere, setting the stage for the meal. The focaccia was delightful, but the ragi bread stole the show. Its hearty, wholesome flavour combined with the zingy dipping oil was a revelation. Never had I imagined ragi bread could be so satisfying and delicious!

I was particularly eager to try several menu items, and I wasn’t disappointed. The rocket asparagus, broccoli, green apple, and pomelo herb salad with jalapeno-kwii dressing, cashew oatmeal granola, and parmesan was a refreshing start. The salad was not just a side dish but a fulfilling experience. The crisp greens and fruits create a burst of flavours that set a promising tone for the evening.

The three-mushroom parfait, rich and creamy, was a standout dish. The depth of umami flavours in the parfait was beautifully complemented by perfectly buttered and toasted sourdough slices. This pairing was certainly a testament to Dos’s commitment to flavour harmony.

Next, I sampled the seafood one-pot rice meal, which lived up to its promise of being loaded with seafood. It was brimming with prawns, calamari, crispy fish, and a medley of vegetables. Each component was cooked to perfection, with the seafood crisp and flavourful. The dish as a whole was also a delightful symphony of tastes.

Though Dos has yet to introduce its alcohol menu, the mocktails are exceptional. I enjoyed the Dreamer, a refreshing elderflower and green apple mocktail with cinnamon and vanilla foam. This drink was a perfect match for the seafood, enhancing the overall dining experience with its crisp, refreshing flavours.

A Fresh Perspective On Street Food

The pizzas at Dos are baked on potato-fermented dough crusts, offering a unique twist on a classic favourite. The Neapolitan pizza, topped with walnut pesto, cream cheese, veggies, salsa, and crispy kale, featured a distinctive crust. It was both light and flavourful. The highlight of the meal was undoubtedly the croissant bun burger. This burger, encased in a buttery, flaky croissant, was filled with a grilled chilli portobello mushroom and Kalari cheese, a regional speciality from Jammu. The first bite was an exquisite experience, with the rich, juicy mushroom and cheese creating a delectable combination. Accompanied by house-made tomato and mustard sauces, the burger was a culinary triumph. The tomato sauce tasted like a blend of ketchup, barbecue, and a hint of tabasco, and the zesty mustard certainly made the accompanying fries irresistibly good.

Dos aspires to be a favourite dining spot and a regular haunt for its patrons.
