The ones who know a city can be understood through one steaming plate of biryani. Because biryani in India is not one dish wearing different outfits. It is history, migration, ego, inheritance, trade routes, regional spice logic, and family secrets packed into rice. 1. Hyderabad

There are cities known for biryani, and then there is Hyderabad, where biryani has near-constitutional importance.

Its roots are tied to the kitchens of the Nizams, where Persian influences met local ingredients and Deccan appetite. The most celebrated version is Kacchi Biryani, where raw marinated meat is placed beneath partially cooked rice, then sealed and slow-cooked on a dum so everything finishes together. Done right, the meat turns tender, the rice takes on spice and stock, and each grain smells like it had a purpose in life.

Hyderabadi biryani is unapologetic! With fried onions, saffron, mint, chilli, richness and aroma, it does not believe in underplaying itself.

2. Lucknow

Traditionally, the pakki style is common here, in which meat is cooked first, then combined with rice and finished together.

Kolkata Biryani has done something remarkable; it made potato emotionally significant in a place where it does not belong.

Its story is usually linked to Nawab Wajid Ali Shah, exiled from Lucknow to Kolkata in the 19th century. Along with him came Awadhi culinary traditions, which gradually adapted to local tastes and economics. The result became one of India’s most beloved regional styles! 

Lighter than many richer northern versions, Kolkata Biryani leans on fragrance, gentle spice, and elegance. It often arrives with a large potato and sometimes an egg. Outsiders may laugh at the potato, but they are mistaken.

That potato has absorbed stock, fat, spice, and aroma until it becomes one of the best bites on the plate.

4. Chennai 

Many travellers come to Chennai expecting standard biryani rules; Chennai enjoys proving them wrong.

One of the most loved styles here is Dindigul Biryani, originating in Tamil Nadu’s Dindigul region but deeply popular across the city. Instead of long-grained basmati, it uses seeraga samba rice, which are small and aromatic grains that hold masala beautifully and create a completely different texture.

The flavour profile often includes black pepper, curd-marinated meat, and a slight tang that cuts through richness. If you believed biryani required basmati to be legitimate, Chennai will rearrange your opinions in under ten minutes. Some lessons are best taught with a second helping.

5. Kozhikode 

Kozhikode’s Malabar Biryani does not rely on brute force; it wins more elegantly.

Often made with kaima or jeerakasala rice, this biryani uses short aromatic grains that create a softer and richer mouthfeel than basmati. Kerala’s long trading history, especially Arab connections, helped shape a cuisine where spice, perfume, and richness meet in careful proportion.

Expect ghee, caramelised onions, nuts, raisins, and gently spiced meat. The first reaction many people have is confusion; this is biryani, but it behaves differently.

6. Ambur

Some food capitals were built by kings, but Ambur was built by appetite.

Positioned on the old travel route between Chennai and Bengaluru, Ambur became famous because people stopped, ate, and refused to shut up about it afterwards. Its biryani is linked to Arcot Nawab traditions and usually features seeraga samba rice, tender meat, restrained masala, and a pleasant tang from curd and tomato.

Many South Indians speak of it with near-religious conviction. Once you try it, their tone starts making sense.

7. Thalassery 

Thalassery biryani feels like a place with stories to tell.

From northern Kerala’s historic trading coast, this style uses jeerakasala rice and often includes roasted nuts, dried fruits, fragrant spices, and beautifully cooked meat or seafood. It reflects a region shaped by maritime exchange, where ingredients and ideas often travelled.

What makes it memorable is the contrast. It has sweet notes, but is not dessert-like. You keep expecting one flavour to dominate, but none does. 

That level of maturity is rare in people and rarer in rice dishes.

8. Mumbai

Mumbai cannot offer one single biryani identity because Mumbai has never been interested in being one thing.

Its food reflects migration, trade, communities, ambition, and overcrowded brilliance. Here you can find Bohri biryani with sweet-savoury character, fiery Memoni biryani, Mughlai-inspired versions, seafood biryanis, and neighbourhood spots whose recipes survive purely through loyal customers and word of mouth.
