There are few Indian desserts that are as ubiquitously found across the diverse culinary traditions in the subcontinent as Kheer. From chawal to sabudana, kheer recipes are as diverse as the Indian cuisine itself. One of the lesser-known but equally delicious variations of this dessert is found in Uttar Pradesh’s Lucknow region. Dubbed the Lucknowi Gulatthi Kheer, it has a distinct flavour that sets it apart from the rest of the kheer types, and yet, offers the same familiarity of the beloved dessert that makes it so comforting!

The recipe of this kheer was shared by the popular Chef Mohsin Qureshi. Gulatthi is a common dessert in the region of Rampur. Usually, it is seen as a distinct dessert from Kheer and Firni. However, since the major ingredients in all three are rice, milk and sugar, they can be seen as interchangeable. Try this recipe at home and impress your guests with it!

Ingredients

1 Ltr Milk

50 gm Raisins

100 gm Rice

50 gm Almond

½ gm Saffron

50 gm Cashew

10 cardamom

50 gm Pista

500 gm Sugar

500 gm Khoya

50 gm Desi Ghee

1 spn Kewra Water

3 drops of Meetha Itr

How To Make It: –

  • Boil the milk in a utensil. Add soaked rice when the milk has boiled.
  • Add chopped cashews and saffron to the mix. Crush the cardamom pods in a mortar and pestle and add them as well.
  • When the kheer thickens, take it off the stove. Add khoya and sugar to it.
  • Thrash the kheer thoroughly. Ensure that the grains of khoya are not broken down.
  • Add ghee and the rest of the nuts and dry fruits.
  • Finally, add kewra water and itr to it.
  • You can serve it warm or chilled, based on your preferences.
