We love mangoes in summer, but people often tend to overlook the silent hero that makes the hot weather a bit bearable–melons! Juicy, refreshing, and naturally sweet, melons are a versatile fruit that you can use to make desserts, chilled beverages, and even a sabzi! Here are a few recipes that you can make with this amazing summer fruit to make the most of this season.

Melon Recipes To Try In Summer

1. Melon Malai Kulfi

Ingredients:

1 litre+¼ cup full-fat milk
400g diced musk melon
A Handful of melon seeds (optional)
5 tbsp condensed Milk
1 tbsp custard powder
Green colour

Method

1. Make a puree of the melon (optionally with seeds).
2. Boil the milk till it’s reduced to half.
3. In a separate pan, boil the melon puree.
4. When bubbles start to form, add the condensed milk and mix well.
5. To thicken the kulfi, mix the custard powder with ¼ cup milk and add it to the melon puree.
6. Add the reduced milk to the melon mixture. Optionally, you can add the food colour, mix everything well, and give it a quick boil.
7. Once it cools down, mix it in a grinder to make a smooth paste.
8. Put it in the mould and let it rest in the fridge for 7-9 hours.

2. Melon Slush

Ingredients

2 medium melons
½ cup orange squash
Ice cubes

Method

1. Take two melons. Peel and cut them into cubes.
2. Then, let it rest in the freezer till chilled.
3. Put the melon pieces in a blender and pulse till you get a slush-like consistency.
4. Add some orange squash along with ¼ cup water and blend again.
5. Next, add ice cubes and blend
6. Pour and serve chilled.

3. Kharbooza Sabzi

Ingredients

1 muskmelon
2 tbsp ghee/oil
1 tsp cumin seeds
½ tsp turmeric powder
Salt
2 chopped green chillies
½ tsp coriander powder
½ tsp chilli flakes
½ tsp chilli powder
1.5 tbsp sugar
Juice of 1 lemon
Fresh coriander, chopped

Method

1. Wash, cut the melon, and scoop out all the seeds.
2. Peel and chop the melon roughly.
3. In a kadhai, add the ghee. Once it becomes hot, add the cumin seeds.
4. Then, add some turmeric powder, melon pieces, and salt to taste.
5. Cover with a lid and let it cook on low flame.
6. Add the remaining ingredients and mix well.
7. Finally, add the coriander leaves, mash the melons a little, and serve.

4. Melon Mousse

Ingredients

1 melon
Gelatin powder
1 cup whipping cream
¼ cup boiling water
2 tbsp sugar
2 tbsp lime juice
2 tbsp icing sugar
1 tsp lime zest,
½ tsp vanilla extract

Method

1. Cut the melon into half and scoop out the seed and then the flesh. The idea is to use the cover as bowls later.
2. Shop the melon in rough cubes and then make a puree in a blender until smooth.
3. Add in the sugar and mix again.
4. Whip cream with icing sugar and vanilla until you get stiff peaks.
5. In a bowl, add gelatin to boiling water. Then, add lime juice and mix until completely dissolved.
6. Mix it with the melon purée.
7. Now, combine it with whipped cream and lime zest.
8. Put it in the melon bowls, and garnish with some melon pieces and honey.

5. Muskmelonade

Ingredients

1 ripe muskmelon
Juice of 1 lemon
¼ cup sugar
Cold water
Salt
Ice
Fresh mint leaves for garnish

Method

1. Peel the muskmelon, remove the seeds, and cut it into small cubes.
2. In a blender, combine the muskmelon cubes, fresh lemon juice, sugar, and a pinch of salt.
3. Add cold water to it and blend till the mixture is smooth.
4. Strain the mixture, if you want a smoother consistency.
5. Pour the blended mixture into a large pitcher.
6. Add 2 cups of cold water and stir well.
7. Pour the lemonade over ice and garnish with mint leaves.

6. Melon Sorbet

Ingredients

2 muskmelons
Fresh mint leaves
1 tbsp honey
Juice of 1 lemon
½ cup simple sugar syrup
30 ml tequila (optional)

Method

1. Scoop out the seeds and roughly chop the melon into small pieces.
2. Add the chilled melon pieces to a blender, along with some fresh mint leaves, honey, and lemon juice.
3. Next, add simple sugar syrup, some tequila, and salt.
4. Blend everything together.
5. Pour it into a container, cover it with foil, and let it rest in the freezer overnight.
6. Scoop out and enjoy.

Ingredients

1 Melon
1 Mango
300 ml milk
Sweetener of choice
Nuts for garnish

Method 

1. Remove the top of the muskmelon.
2. Then, de-seed it and scoop out the melon.
3. Chop the mango into small pieces and add it to a blender.
4. Put the melon, sweetener of choice, and milk in it and blend everything together.
5. Use the melon shell as the bowl and add some ice, and chopped fruits in it.
6. Finally, pour the blended mixture and garnish with chopped nuts and seeds.
