Spices are to food what fashion is to clothes. If you have an understanding of the flavours each spice adds to food, you can easily become a decent cook. There are a number of cuisines around the world that have a signature spice blend that is characteristic of the flavours associated with that particular cuisine. TasteAtlas recently released a list ranking the best spice blends in the world and guess what? Garam Masala bagged the second spot on the list!

For those who may not know, Garam Masala is made by blending an array of spices together. Although regional variations exist, typically, the spices that go into the blend are staples. They include fennel seeds, bay leaves, black and white peppercorns, cloves, cinnamon, mace, cardamom, cumin, coriander, and red chilli.
This constitutes the basic garam masala that almost every Indian household has. There exist a number of variations of it depending on the region. These variations are also why the spice is singular no matter where you taste it.
There are a few other spice blends as well that were not included in the list but are worth mentioning. One of these is the five-spice powder used in Chinese cuisine. It includes Chinese cinnamon, cloves, Sichuan peppercorns and star anise and fennel seeds. Each of these spices represents one of the five major tastes – sweet, salty, bitter, savoury and sour.
