What if we told you, that to get a taste of authentic Southern Californian Chicken waffles, all you had to do is take a short cab ride to Ambience Mall Gurgaon. Seems doable right? Bruxie, a fast-casual restaurant chain has made its debut in India, and that too in Gurgaon.
What Is It?
Bruxie, is an extremely popular restaurant chain which could come across as an ideal representation of the authentic American cuisine, but with its own interesting twist. Headed by two Southern-Californian chefs, they have given a new concept to the extremely popular dish, and all time favourite, crispy fried chicken.

“We thought of using the Belgian-style waffle as a sandwich bread and the crispy fried chicken as the filling in it, and it became such a hot among people. The next thing you know, the waffle sandwiches were being sold more than the regular ones,” said Chef Kelly Mullarney, who is also the co-founder of Bruxie. Coming to India was never really a part of the plan, but Chef Kelly seemed to be quite excited about it. “I love bold flavours. The spices in my food, the seasoning, is always slightly extra. I would never want my food to taste bland. And the fact that Indians love to play with flavours themselves, worked quite well for me.”

The Crispy Fried Chicken Waffle Sandwiches are like comfort food. The waffles are light and crispy and the chicken is marinated, deep fried and flavourful. The menu has numerous options to offer in terms of flavour as well.

No meal is complete without dessert. And Chef Kelly has gone a step further to add his own waffle interpretation to the iconic crème brûlée. It custard, strawberries and caramelised sugar in a waffle sandwich. One bite, and in no time you’ll clean the plate.
