As a food enthusiast, I always search for experiences beyond just eating – something that will enthral all my senses and spark my curiosity. That’s precisely what I found at the Saffron Society Supper Club. My first-ever supper club experience exceeded expectations, offering innovative dishes and great company. The interactive dining experience created an unforgettable escape from the mundanity of daily life. It perfectly blended culinary artistry and social connection, leaving me eager for more.

Chef Priyansh Parekh’s Vision And Vegan Journey

Leading this culinary journey is Chef Priyansh Parekh, a Le Cordon Bleu alumnus and an emerging talent in the plant-based food scene. With over five years of a vegan lifestyle, Chef Priyansh reinvents Indian cuisine by incorporating a global perspective. He fuses his multicultural background with his professional skills to create innovative dishes. His creations weave a narrative, blending traditional flavours with modern innovation through bold Indian spices and creative techniques. Driven by a deep concern for environmental sustainability sparked by the devastating 2019 Amazon wildfires, Chef Priyansh committed to embracing a plant-based lifestyle. His innovative dishes not only celebrate the beauty of Indian culinary traditions. It also conveys a powerful message about the importance of mindful eating and caring for our planet.

An Indelible 5-Course Plant-Based Feast

The menu offered a delightful 5-course meal celebrating plant-based cuisine’s diverse flavours and textures. Incorporating rich Indian spices and creative twists on traditional dishes provided a fresh and exciting dining experience. The first course featured a vibrant, Crispy Corn Salad with toasted peanuts, pomegranate, fresh mint, and a zesty lemon pepper dressing. The second course featured a warm and comforting bowl of Dhan-soup, inspired by the traditional Parsi dish Dhansak. It was beautifully complemented by crispy curry leaf butter croutons, enhancing the overall flavour and texture of the dish.

The third course presents an enticing Green Tart with a crispy puri (Gujarati Mathiya) that serves as the perfect base. Topped with a flavourful pea truffle puree, complemented by fresh snow peas and pickled vegetables, creating a harmonious balance of textures and tastes. For the main course, the Tofu and Mushroom dish puts a South Asian spin on Beef Bourguignon, replacing beef with mushrooms and a Malai sauce reminiscent of Béarnaise. The meal concluded with a decadent plant-based Falooda featuring rose jelly, spiced peanut butter ice cream, basil seeds, cardamom milk, nuts, and shaved coconut. It was an indulgent and flavourful finale.
