Along the lanes of Kanpur, we were accompanied by Kanpur ka beta, Kapil Kanpuriya. Yes, that’s a Kanpur overdose! But who’s complaining! The content creator devoured samosas from Pappu Samosa Wala, halted for a kadak cup of chai at Banarasi Tea Stall and even introduced us to Thaggu Ke Laddoo. But what lingered was his special recipe for Kanpur’s beloved Malai Chai.

Uttar Pradesh’s favourite content creator, Kapil Kanpuriya, took us to Banarasi Tea Stall in Kanpur. Started as a tiny tea shack, today it stands as a full-fledged restaurant feeding people by the hordes. Just as its name suggests, the tea, especially Malai Chai, is what people return for. Frothy, creamy Malai Chai served with moreish Bun Maska are signatures here.

We had to ask Kapil if he also drinks Malai Chai at home. To this, the content creator joked that he prepares it himself. Because if he leaves it to his mom, she dilutes it with water, especially when guests come over. He also revealed that usually, people believe drinking chai can cause gastric issues. But Kanpur’s Malai Chai is a healthier alternative, and the credit goes to its unique technique.

He Also Revealed How He Makes It

Sharing a rough yet special recipe for the same, Kapil said that the milk, the tea and the cream are all prepared separately and then combined. First, boiled milk is poured into the kulhad or earthen cup. Then, a brewed decoction of tea leaves is filtered over it. Then, masala is sprinkled over it. Finally, it’s finished with a dollop of malai. That’s Kanpur-style Malai Chai for you!

Since the preparation style differs, the taste also stands out from other chai variants. We can’t wait to make this Malai Chai at home. While sipping chai and munching on bun maska, the content creator spoke of a ‘circle of life’ he observed in Kanpur. He talks about a group of men usually sipping chai in a tea stall. Eventually, each of them finds a job and spends less time with their gang. And the last one left gets married. The same tea stall later welcomes a new set of men, starting their journey as young adults.
