Avatara, a fine-dining destination in Mumbai, has unveiled its latest culinary evolution. They have rolled out a 16-course vegetarian tasting menu, with a unique cocktail collection. What’s special about this menu is that the drinks are inspired by the five forces of nature.
Avatara Mumbai Launches 16-Course Vegetarian Tasting Menu
Staying true to its ‘Rooted in Traditions’ philosophy, Avatara has now reimagined vegetarian dining, curating a menu that speaks to the modern palate while honouring timeless flavours. It will offer a bold flavour with ingredients like onion, garlic, and more, offering a fresh take on Indian vegetarian dining. The menu is called Transcending Journey and is all about change and evolution. Inspired by India’s farming history and the Indus Valley Civilisation, the restaurants have used mustard greens, lentils, sesame, and peas, but in an innovative manner.
The highlight of this menu is that it consists of dishes with a combination of classic Indian flavours and cooking techniques from across the world. For a more personalised experience, Avatara in Mumbai also offers customised tasting menus for Vegan, Jain, Satvik, and Gluten-Free diners. It aims to provide an inclusive dining experience to everyone.
Regarding this vision, Chef Sanket Joshi, Head Chef of Avatara Mumbai, said, “Our vision is to establish Indian vegetarian gastronomy on the global stage as a refined, soulful, and sustainable experience.” He also added, “This menu blends tradition with imagination, reinterpreting dishes like ghee roast and saag while adding new elements like ceviche, pandan ice cream, and stroopwafel.”

Signature Wine Cocktails
The 16-course vegetarian meal will be served with signature wine cocktails. These drinks are inspired by the five elements of nature—Vayu (Air), Jala (Water), Agni (Fire), Prithvi (Earth), and Akash (Ether). Each cocktail will complement the tasting menu, making the dining experience memorable.
The 16-course tasting menu includes dishes like butternut taco with dhokla & black lime, mango chenna with pandan ice cream, and potato & kasundi curry with tadka dahi vada—all crafted to celebrate India’s diverse bounty. The flagship outlet of this restaurant is in Dubai, and it is the world’s first Michelin-starred Indian vegetarian restaurant.
