Do you know what Pommes Soufflées are? These are a classic French delicacy made by frying thin potato slices until they puff up into golden, airy pillows. You can think of them as France’s version of our pani puris or golgappas, just without the filling and tangy water. Recently, RPG Group Chairperson Harsh Goenka shared an easy recipe for making these French-style snacks at home. The recipe is simple, and trust us, you will love trying it out!

Harsh Goenka, the Chairman of RPG Enterprises in Mumbai, is known for his love of food, something we know if we go by his Instagram. The businessman recently posted a photo of Pommes Soufflées, calling them one of his favourite snacks to enjoy while in Paris or London. The image he shared looked absolutely mouth-watering. And honestly, if you look closely, these puffed potato bites do resemble our golgappas. The caption under the post read, “One of my favourites in London or Paris — Pommes Soufflées.
I often wonder why nobody makes them here. So reminiscent of our pani puris- they may lack the punch of our pani puris, but have such a sophisticated air about them!”

He didn’t stop at sharing the image, though; he also posted the full recipe. Take a look below.

Here’s The Recipe: 

Ingredients:

  • 3-4 potatoes (increase quantity as needed)
  • Oil for frying
  • Salt to taste

Method:

  • Slice the potatoes thinly and dry them completely (make sure there’s no moisture).
  • Fry once in medium-hot oil (about 150°C) until lightly set.
  • Remove and let them rest.
  • Fry again in hotter oil (about 190°C) and watch them puff up.
  • Drain, sprinkle salt, and serve immediately.

And just like that, your golden clouds of crisp potatoes, Pommes Soufflées, are ready to serve!

Netizens React To Pommes Soufflées’ Recipe

Many of his followers thanked him for sharing the recipe. One wrote, “Pommes soufflés are a sophisticated French fried potato dish, and their use in this context is a modern, fusion approach to Indian street food.” Another commented, “Looks like Pani puchka. I am sure it’s not sweet.” One of the Instagram users also wrote, “I make them! Not often. Too cumbersome.”

Fun Fact: Did you know Pommes Soufflées were discovered by accident? According to Wikipedia, Chef Jean-Louis-Francois Collinet invented them in 1837 at the Pavillon Henri IV near Paris. The chef had removed the fried potatoes when Queen Marie-Amelie and her guests were delayed for a meal. Later, when he put them back in the hot oil, they puffed up beautifully. And since then, these snacks have been enjoyed as Pommes Soufflées in Europe!
