A Shortcut Recipe That Is Perfect For Dessert Lovers

Ingredients

  • 1 cup thick curd
  • ½ cup condensed milk
  • 2 tbsp milk powder (optional, but highly recommended if the curd is loose)
  • 8–10 almonds, chopped
  • 8–10 cashews, chopped
  • ½ tsp cardamom powder
  • A pinch of saffron (kesar)

Method

  1. Start with thick curd; this is non-negotiable. If the curd feels watery or loose, add milk powder; it fixes the texture and makes the final dessert creamier.
  2. In a mixing bowl, combine the curd and condensed milk. Add chopped almonds, cashews, cardamom powder, and saffron. Whisk everything together until it turns all smooth and mushy.
  3. Take a microwave-safe mould or bowl and line it with butter paper. Skipping this step can make unmoulding messy later!
  4. Scatter a few extra nuts and saffron strands at the base. Once the Bhapa Doi is flipped, these sit beautifully on top.
  5. Pour the mixture into the mould and place it in the microwave.
  6. It is suggested to microwave it for around 2.5 minutes.
  7. Refrigerate it for at least an hour. Overnight works even better because the dessert firms up and the flavours become more pronounced.
  8. Once it is chilled, flip it onto a serving plate, peel away the butter paper, and serve it cold.
