Kitchens smell different, menus suddenly bloom with greens and grains and conversations shift  from “what tastes good?” to “what does good?” Welcome to World Vegan Day, born in 1994 thanks to The Vegan Society in the UK, as a tribute to the year the word ‘vegan’ itself entered the world.

This year’s theme is “Celebrating 80 Years of Vegan Living.” It also celebrates eighty years of asking: What if compassion was on the plate, too? And honestly, veganism today sits at an interesting crossroads. It’s no longer fringy activism or a salad-only stereotype. It’s Michelin-star chefs reinventing classics, athletes choosing chickpeas over chicken, and home cooks discovering that coconut milk can be magic.
