Mango & Passion Fruit Kakigori At Paradox, Mumbai
Paradox is one of the latest additions to Mumbai’s ever-growing culinary landscape. This cocktail bar was launched by Aditi and Aditya Dugar, the masterminds behind the successful Masque Restaurant in the city. While the place has a plethora of cocktails for you to try, it is their massive Mango & Passion Fruit Kakigori that caught our attention.
Varun Totlani, Head Chef at Paradox, took to Instagram to share how he and his team mastered the art of making massive and fluffy kakigoris. He revealed that after spending hours on social media, he found a page that first got him hooked on making kakigori.

He shared that the dish has a nostalgia for Mumbai’s ‘gola’ and the flavours fit for the weather in the city. After multiple iterations and failed attempts, his team was able to create a “fluffy monster”. They named it Mango & Passion Fruit Kakigori and it looks delicious.

What Exactly Is Kakigori & Why Should You Try It?
Now, kakigori is a traditional Japanese shaved ice dessert that people enjoy during sweltering summers. Just like the good ol’ gola in India, this Japanese dessert is flavoured with syrups. It also has toppings like condensed milk and fruits.
At Paradox, Chef Varun Totlani whips up Mango & Passion Fruit Kakigori with precision and lots of techniques. This ensures that you get all the fruity flavours and icy nostalgia. From holding the bowl right to ensuring just enough shaved ice to let the syrups flow in, the art of making kakigori is no joke!
Loaded with flavours, fruits, and pure nostalgia, the Mango & Passion Fruit Kakigori served here is a perfect treat for hot days.
