Emirates To Shift Focus On Vegan Cuisine

Emirates has announced that it is shifting focus to vegan cuisine in order to meet the customers’ desire for minimally-processed food. The new dishes are expected to be onboard for customers in 2027. These are being created in such a way that it does not replace typical proteins and are engineered with plant-based meats and substitutes with a focus on legumes, grains, seeds, and seasonal vegetables, the ingredients of a natural depth of flavour, texture and nutrition.

This is done without relying on ultra-processed alternatives. For instance, instead of replicating meat, the cuisine would be planned forward options, like Mediterranean mezze, Levantine grain salads, Asian noodle bowls, and African stews.

As revealed by the Emirates Vice President of Food & Beverage Design, Doxis Bekris, while there are many commendable lab alternatives available, real food aligns with the airline’s sustainability goals. The aim is to shift from a substitute to a celebration of plants.

Growing Vegan Meal Consumption Amongst Passengers

Currently, the airline serves half a million vegan meals every year. The vegan meal consumption is growing in line with passenger volume. Just the previous year, the top destination with customers that order vegan meals was London. It was followed by Sydney, Bangkok, Melbourne, Frankfurt, Manchester, Mumbai, Bali, and Singapore. As it happens, the airline attributes some demand to non-vegan customers, opting for vegan cuisine when they are flying.
