Nawazuddin Siddiqui is not just passionate about acting and films. His interests extend beyond background music and even food. How do we know this? Well, our Editor-in-Chief Kamiya Jani heard it straight from the horse’s mouth during a recent Sunday Brunch with the Gangs of Wasseypur star at his palatial home in Mumbai. He didn’t let us go empty-handed, as he shared his favourite Keema Karela recipe.

Nawazuddin Siddiqui Describes Keema Karela, A Dish From His Village

While gorging on a homemade spread of Dal Ghosht, Bajra Roti, Phirni and Matar Paneer, with Nawazuddin Siddiqui, Kamiya Jani asked the actor about his favourite “gaav ke dishes”. Pointing out the spread laid out in front of him, the actor mentioned that similar dishes are cooked in his village. Dishes like Dal Ghosht, Moong Dal and more. What he eats at his home in Mumbai, is similar to what’s prepared in his home town.

Nawazuddin also mentioned a Keema Karela to Kamiya. On being asked what it’s about, the actor shared a quick recipe. First, the bittergourd ]is slit in the middle and its seeds are removed. Then, the gourd is sun-dried. After which, mutton keema is stuffed into the sun-dried bittergourd. With a thread, the veggie cradling the keema is tied together. Then, the gourd is fried and topped with dal and more keema. Once the dish is ready, the thread, binding the flavours, is removed, and the bittergourd with keema is eaten. A Complex Dish Involving A Variety Of Techniques

The actor excitedly describes the dish to Kamiya and says the ingredients taste extremely good. So, the karela with keema needs to be kept aside and cooked well for a while to absorb the flavours. Even something like bittergourd tastes less acidic when cooked in this manner. Similarly, the complex flavours of bittergourd permeate into the keema, cutting its richness.
