The name “Bumipura” derives from “Bumi,” meaning earth or land, and “Pura,” meaning city, reflecting the bar’s commitment to honouring tradition while embracing futuristic innovation. The brainchild of Ming Yang Chai, a mixologist with roots in Singapore and Malaysia. Here, you’ll discover an experience where heirloom flavours are masterfully translated into cocktails that capture the essence of beloved Southeast Asian dishes, from Nasi Lemak to Laksa, while embracing Indian spices like curry leaves, tamarind, and coconut milk.
Stepping into Bumipura feels like stepping into a world where the past and future collide. Inspired by Mumbai’s historic Elephanta Caves, the design incorporates dark, majestic columns reminiscent of ancient rock structures.
The bar’s centrepiece is a 21-foot stainless steel counter, creating an intimate space where bartenders and guests are on the same level. The Private Dining Room, a haven for private gatherings, has sliding fluted glass doors that add a touch of mystery. Custom Songket fabric imported from Malaysia is used in the uniforms and décor. Overall, it is a space meant for conversation.
The Menu Is A Celebration Of Culture
Bumipura’s menu is an ode to the intricate flavours of Singapore and Malaysia, reimagined for the cocktail lover. Nearly 90% of the ingredients are sourced locally. The cocktail list is a tribute to iconic dishes, offering drinks like ‘Dear Seri’, a creative spin on Nasi Lemak. For a bar bite, you can indulge in Nasi Lemak Balls, bite-sized wonders that perfectly complement the drink.
But the innovation doesn’t stop there. The Leichazuke, a nostalgic reimagining of the traditional Hakka vegetarian dish Lei Cha, brings together comforting family memories with Japanese influence. Paired with the cocktail ‘Thunder!’, it’s a delightful burst of flavours that thunders on the palate.
One must-try is the ‘O is the New Black’, inspired by the Kopiko coffee candy loved in Southeast Asia. The drink is served with Kaya Toast Supreme, a golden-brown eggless brioche paired with sweet pumpkin kaya jam and house-made coffee liqueur-infused butter.
The bar’s futuristic concept—set 100 years into the future—blends seamlessly with the ancient roots of its design. With signature dishes like Salted Egg Yolk Fries and premium spirits like Crazy Cock’s DHUA, a peated single malt, Bumipura caters to both the adventurous and the discerning.
