When the 75 minutes are over, the judges actually go around off-camera and try everything, which they call a “hot tasting”. This tasting gives the judges an idea ahead of time about where everyone stands and also an understanding of what their food is like at the exact moment it would be served.

Judges Taste The Dishes Before The Shooting Begins

According to Sofia Levin, the contestants are also encouraged to have extra food for the judges to try off camera. And then, the judges try everything again on camera for the audience. This means that the judges already have a baseline understanding of what the dish tastes like at the exact moment it would normally be served, which is similar to how a diner experiences a meal in a restaurant.

The first tasting, which is done off-camera, allows them to understand the food’s flavour, texture and taste. While the second tasting, which is done during the shooting, lets them assess the presentation of the dish served. Sofia also revealed that one of the main jobs of the contestants is to make sure the food looks exactly the same when they are eating it on camera as it did when the cook finished.

This means that the sauces should not change consistency and even the ice cream should taste the same. This means that judging the dishes on MasterChef Australia is not easy and takes a lot of effort too.
