Monkey spit coffee is primarily associated with regions in India and Taiwan. The discovery of this coffee was somewhat serendipitous. Farmers observed that certain monkeys, particularly the Rhesus macaques in India and Formosan rock macaques in Taiwan, would selectively choose and eat the ripest coffee cherries. These cherries, once chewed and spat out by the monkeys, possess unique flavour characteristics. The initial intrigue led to further exploration and intentional harvesting of these monkey-chewed beans.

The production process of monkey spit coffee begins with the natural selection carried out by the monkeys. These primates are known for their ability to choose only the ripest and sweetest coffee cherries, guided by their acute sense of taste and smell. The act of chewing helps in breaking down the pulp surrounding the beans. This, in turn, introduces unique enzymes that affect the beans’ flavour.

Farmers collect the spat-out beans from the forest floor. The collected beans undergo thorough cleaning to remove any remaining pulp and impurities. They are then fermented to further enhance the flavour. This fermentation process is crucial in developing the distinct taste profile of monkey spit coffee.
